
Ingredients:
2 tbsp olive oil
1 onion, chopped
2 tsp mild chilli powder
2 tsp ground cumin
½ tsp smoked paprika
1 tsp garlic granules
2 tsp dried oregano
2 x 400g tins chopped tomatoes
2 tbsp tomato passata
400ml vegetable stock
400g tin kidney beans rinsed and drained
coriander chopped
To serve:
Rice
Grated vegan cheese
Vegan sour cream
Method:
Heat olive oil in a pan, cook Meetballs and put aside on a plate
Add onions to the same pan until golden
Add all the spices and herbs and stir for 5 minutes
Add tomatoes, passata and stock, simmer for 15 mins
Add Meetballs and beans, simmer for 20 mins
Stir in the coriander and serve
