LIME AND GINGER NOODLE SALAD



INGREDIENTS:

  • 250g MEET Tenders (available in the frozen section of Coles)

  • 2 tbsp olive oil

  • 1 packet Soba noodles

  • Cucumber

  • Radish

  • Watercress

DRESSING:

  • Lime juice (Half lime)

  • 1 tbsp minced ginger

  • 1 tsp sesame oil

  • 1.5 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1.5 tbsp maple syrup

  • 2 tbs chilli sauce

METHOD:

  1. Mix the dressing ingredients in a bowl, allow to sit for 15 mins.

  2. Cook the noodles according to the back of the pack instructions. Simmer in boiling water for 4 to 5 mins for the wheat + buckwheat soba noodles. Drain and rinse with cold water.

  3. In a large fry pan over medium heat add 2 tbsp olive oil and cook the MEET Tenders for 2-3mins until golden.

  4. Cut cucumber into half moons and thinly slice the radish.

  5. In a bowl, add the soba noodles, cucumber, radish, MEET Tenders and add dressing. Toss noodles to coat with dressing and add watercress.
