
INGREDIENTS:
250g MEET Tenders (available in the frozen section of Coles)
2 tbsp olive oil
1 packet Soba noodles
Cucumber
Radish
Watercress
DRESSING:
Lime juice (Half lime)
1 tbsp minced ginger
1 tsp sesame oil
1.5 tbsp soy sauce
1 tbsp rice vinegar
1.5 tbsp maple syrup
2 tbs chilli sauce
METHOD:
Mix the dressing ingredients in a bowl, allow to sit for 15 mins.
Cook the noodles according to the back of the pack instructions. Simmer in boiling water for 4 to 5 mins for the wheat + buckwheat soba noodles. Drain and rinse with cold water.
In a large fry pan over medium heat add 2 tbsp olive oil and cook the MEET Tenders for 2-3mins until golden.
Cut cucumber into half moons and thinly slice the radish.
In a bowl, add the soba noodles, cucumber, radish, MEET Tenders and add dressing. Toss noodles to coat with dressing and add watercress.
