PLANT BASED BEEF PAD THAI

INGREDIENTS:

  • 250g MEET Plant Beef Strips (available in the frozen section of Coles)

  • 1 tbs peanuts, crushed

  • 150g dried flat rice noodles

  • 1 cup bean sprouts

  • 1 carrot, peeled, sliced into matchsticks

  • 4 spring onions, chopped coarsley

  • 1 pad thai recipe base (available in Coles)


METHOD:

  1. Place the rice noodles in a bowl and cover with boiling water for 10 minutes. Loosen with a fork before draining and rinsing with cold water. Set aside until needed.

  2. Heat oil in a wok or pan over medium-high heat and add MEET Plant Beef Strips. Cook until browned then add carrots, spring onions, noodles and the pad thai recipe base from your kit; cook for 5 minutes or until heated through. Stir through bean sprouts before taking off heat.

  3. Disperse noodles evenly among bowls before adding pad thai mixture. Top with crushed peanuts and serve with fresh lime wedges.
