INGREDIENTS:
250g MEET Plant Beef Strips (available in the frozen section of Coles)
2 cloves garlic, crushed
1 tbs extra virgin olive oil
2 tbs white balsamic vinegar
2 red onions
2 zucchini, cut into thick rounds
2 green capsicums, cut into 3cm pieces
150g button mushrooms
5ml extra virgin olive oil cooking spray
6 skewers
METHOD:
In a bowl, mix garlic, oil, and vinegar. Cut onions into thick wedges, then halve each wedge crossways. Add onions to the vinegar mix and gently toss to coat, keeping onion layers intact.
While allowing onions to marinate in the vinegar mix, cut the zucchini, capsicum and button mushrooms.
Thread chunks of onion, zucchini, capsicum and mushroom onto skewers. Spray with oil.
Heat a barbecue grill or plate on medium-high heat. Cook skewers, turning occasionally, for 8 minutes or until tender. Remove and set aside.
Add oil to the grill then MEET Plant Beef Strips and cook until golden and cooked through.
Serve skewers with salad.
