INGREDIENTS: - 250g MEET Beef Free Strips (Available in the Chilled section of Coles)

- 25g Bagnori (seaweed) sheets - 1 Carrot grated - 1 Avocado thinly sliced - Soy Sauce

RICE: - 300g Sushi rice - 100ml Rice wine vinegar

- 2 tbsp Caster sugar

EXTRAS: - Rolling sheet

METHOD: 1. Rinse sushi rice under cold water, soak roughly two thirds of rice to cold water in a sauce pan for 30min. Bring to boil and cook for 10min or until water has been absorbed. 2. Stir through rice wine vinegar and sugar. 3. Evenly spread rice on a baking tray, this will help cool down rice. Cover with damp tea towel. 4. While rice is cooling, heat the 1tsp olive oil in a large saucepan, over a medium heat. Add the MEET Beef Free Strips and onion and cook for 3-5 min or until MEET Beef Free Strips are lightly golden and set aside. 5. Place a nori sheet on the rolling mat (Wet hands to prevent sticking) and grab a handful of sushi rice and spread evenly on two thirds of the nori sheet. 6. Place a thin row of Carrots, avocado and MEET Beef Free Strips across the middle of the rice. 7. Hold near the end of the rolling sheet, lift and start rolling the sheet. You can seal the nori sheet by dampening your fingers with water and going along the edge of the nori sheet. 8. Using a sharp knife cut the roll into bite size pieces.

9. Serve with soy sauce (Optional)
