250g MEET Beef Free Strips (Available in the chilled meat section of Coles)
2tbs olive oil
1 tsp wasabi paste
2 tbsp salt-reduced soy sauce
1 1/2 tbsp mirin
(1 cup) frozen shelled edamame beans
250g packet zucchini noodles
1 Tbs sesame seeds
1 bunch of fresh mint
1 bunch of fresh basil
1 red capsicum
1 red onion
2 steams spring onion
Combine the wasabi, soy sauce and mirin in a small bowl. Place half the dressing in a shallow dish and add the MEET Beef Free Strips - turn to coat. Then cover and set aside for 10 minutes to marinate and reserve the remaining dressing.
In a medium pan over a medium heat, add the olive oil, MEET Beef Free Strips and cook until golden 2-3 minutes. Transfer to a plate. Cover loosely with foil and set aside
Meanwhile, steam edamame for 2-3 minutes over a saucepan of simmering water, adding the zucchini in the last minute of cooking and then drain.
Thinly slice the radishes, capsicum, spring onion, red onion and roughly chop basil and mint leaves.
Combine the zucchini, edamame, capsicum, mint, basil, spring onion and onion on a large serving plate. Top with MEET Beef Free Strips and drizzle over the reserved dressing and then sprinkle with sesame seeds.
