VIETNAMESE NOODLE SALAD

Ingredients:

  • 2 pkts of MEET Tenders

  • Red and yellow capsicum

  • Cucumber

  • Carrot

  • Coriander

  • Mint

  • Lime

  • 1 pkt of rice vermicelli noodles

Sauce for MEET Tenders:

  • 2 tsp dark soy sauce

  • 1 tsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp sugar

  • 2 garlic cloves minced

  • black pepper

Dressing:

  • 1/4 cup rice vinegar

  • 1 tbsp water

  • 3 tbsp lime juice

  • 3 tbsp sugar

  • 2 tbsp soy sauce

  • 2 tbsp lemon gras grated (white part)

  • 1 garlic clove minced


Method:

  1. Slice the capsicum and carrot into thin ribbons

  2. Slice cucumber into small half circles

  3. Combine all the ingredients for the MEET Tenders sauce

  4. Cook tenders for 5-6 minutes then add the sauce and cook for an extra 2-3 minutes

  5. Mix all the ingredients for the dressing and stir well

  6. Cook the noodles according to the packet instructions

  7. Serve noodles, add veggies and tenders

  8. Add the dressing

  9. Garnish with coriander and mint

  10. Enjoy!
