THAI BEEF FREE SALAD



INGREDIENTS:

- 250g MEET Beef Free Strips (Available in the Chilled meat section of Coles)

- 2 tsp olive oil

- 2 small Lebanese cucumbers, cut into ribbons

- 250g cherry tomatoes

- 1/2 long red chilli, seeded, thinly sliced

-1/4 cup mint leaves

-1/4 cup coriander leaves

-1/4 cup Thai basil leaves

-1 tbsp coconut amino sauce

-1 tbsp lime juice

-1 tbsp brown sugar

-1/2 tsp sesame oil



METHOD:


1. Preheat a chargrill pan on high. Add the MEET Beef Free Strips and cook for 2-3 minutes. Transfer to a plate and cover with foil to keep warm and set aside. 2. Combine the cucumber, tomato, chilli, mint, coriander and basil on a serving platter. Combine the coconut amino sauce, lime juice, sugar and sesame oil in a screw-top jar and shake until well combined. 3. Arrange the beef free strips over the salad. Drizzle with dressing/ lime juice. Serve immediately.
