SPICY SMOKED TACOS

Ingredients:

Pickled Onions:

  • 1 red onion

  • 1 tsp salt

  • 1 tbsp sugar

  • ¼ cup apple cider vinegar

Method:

  1. Finely dice the red onions. Combine the vinegar, salt and sugar in a small jar. Add the diced onions, and leave to soak.

  2. Heat cooking oil in a large fry-pan over medium-high heat. Add the garlic and smoked paprika and oregano, and fry for a minute

  3. Reduce the heat to medium, then add in the MEET Beef Free Strips, tossing until evenly coated. Cook for a further 2-3 minutes until the strips are crispy.

  4. Heat the tortillas in a pan over medium-heat until warmed through (roughly a minute or two).

  5. To serve, fill each tortilla with the Beef Free Strips, top with diced avocado, the pickled red-onions and a chopped coriander. Squeeze over with lime juice, and serve warm.
