Ingredients:
1 tsp smoked paprika
1 tsp minced garlic
½ tsp dried oregano
8 small flour or corn tortillas
1 avocado- diced
1 lime
Pickled Onions:
1 red onion
1 tsp salt
1 tbsp sugar
¼ cup apple cider vinegar
Method:
Finely dice the red onions. Combine the vinegar, salt and sugar in a small jar. Add the diced onions, and leave to soak.
Heat cooking oil in a large fry-pan over medium-high heat. Add the garlic and smoked paprika and oregano, and fry for a minute
Reduce the heat to medium, then add in the MEET Beef Free Strips, tossing until evenly coated. Cook for a further 2-3 minutes until the strips are crispy.
Heat the tortillas in a pan over medium-heat until warmed through (roughly a minute or two).
To serve, fill each tortilla with the Beef Free Strips, top with diced avocado, the pickled red-onions and a chopped coriander. Squeeze over with lime juice, and serve warm.
