- 250g MEET Italian Meetballs (Available in the Chilled section of Coles)

- 2tsp Olive Oil - 2 Potatoes - Pinch Italian Seasoning - 1 brown onion - 1 bunch parsley - Pinch of salt - 20g Nutlex - 1 Can diced tomato sauce

- 2tbs tomato paste


  1. Heat the 2tsp olive oil in a large saucepan, over a medium heat. Add the MEET Italian Meetballs and cook for 3-5 min or until lightly golden turning Meetballs so they cook evenly.

  2. While the MEET Italian Meetballs are cooking, Peel the potatoes and cut into 2cm chunks. Put in a medium saucepan of salted water and bring to the boil. Reduce the heat to medium and cook for 10 mins or until tender. Drain, then return to the pan. Mash the potato until smooth, then add 20g of Nutlex, season with salt and pepper (optional) and stir until well combined.

  3. Add the tomatoes and 2 tbs tomato paste to the sauce pan with the Meetballs and bring to the boil, then reduce the heat to medium and cook for 5 mins. Then remove the pan from the heat.

  4. Divide the potato mash between two bowls, and top with the Meetballs and sauce. Garnish with the parsley leaves.
