
INGREDIENTS:
250g MEET Chicken Free Strips (Available in the chilled meat section of Woolworths)
2 tbsp olive oil
Pinch of crushed peanuts
Skewer sticks
SAUCE:
3 tbs smooth peanut butter
1 tbsp soy sauce
1/2 tsp chilli flakes
1 tbsp vegetarian fish sauce
200ml can coconut milk
1 tbsp brown sugar
1/2 tsp ground coriander
2 tbsp lime juice
Pinch crushed peanuts
METHOD:
Place all of the satay sauce ingredients in a small pan, except for the lime juice which will be added later.
Heat the pan of sauce over a medium heat whilst stirring with a wooden spoon. The sauce will start to thicken once it starts to boil, turn down heat and continue to stir until thickened. Once the sauce has thickened, turn heat off and stir in lime juice.
Transfer the sauce to a serving dish. In a large fry pan over medium heat, add 2 tbsp of olive oil and cook the MEET Chicken Free Strips for 3-5min until golden. Place 5-6 pieces of the MEET Chicken Free Strips on to a skewer.
Add the cooked satay sauce over the skewers and top with crushed peanuts and serve with your favourite vegetables.
