1 tsp cooking oil
1 tsp smoked paprika
1 garlic clove- crushed
1 tsp red chilli flakes (optional)
250 cooked brown rice
2 tbsp pickled red onions (or any pickled vegetable of choice- jalapeños or cabbage would taste great!)
200g frozen corn kernels- defrosted
8 cherry tomatoes- quartered
1 avocado- thinly sliced
Handful of fresh coriander
2 tbsp sliced spring onions
1 lime- juiced
1 tsp extra-virgin olive oil
Salt & freshly ground black pepper
Heat the cooking oil in a small fry-pan over medium-high heat. Add the MEET Beef free Strips, smoked paprika, garlic clove and chilli flakes and pan-fry for 2-3 minutes or until fragrant and golden. Remove from heat.
To assemble your bowls, spoon the cooked brown rice across two bowls. Arrange the pickled onions, corn kernels, cherry tomatoes and sliced avocado around the edge of the bowl. Gently place the Meet Strips at the centre.
Add a generous handful of fresh coriander and sliced spring onions, and squeeze over with lime juice. Drizzle over with the extra-virgin olive oil, and season with salt & pepper to taste.
