PLANT BASED OMELETTE



INGREDIENTS: • 250g MEET Beef Free Strips (Available at Coles in the chilled meat section) • 2 tsp Oil (for MEET Beef Free Strips) • 50g Organ Vegan Eggs (Available at coles)

• 240ml Water • 2.5 tsp Oil (for Easy Eggs) • Vegan Kimchi • 1/2 Cup Peas • 1 Red Chilli • 60g Bean Sprouts • Salt and Pepper • Vegan Mayo (Optional)

METHOD:

  1. Whisk Easy Egg, water and oil in a bowl until blended.

  2. Spray a medium non stick skillet with oil. Heat over medium heat until hot. Pour in egg free mixture. Let cook for 1-2min. Once it has cooked on the underside use a spatular to flip over the omelette, and cook the other side.

  3. In a separate large pan over a medium heat, heat 2tbs of olive oil.

  4. Add the MEET Beef Free Strips, and cook for 5-6min until the strips start to brown.

  5. Defrost peas by placing them in a small pot. Once defrosted drain the peas.

  6. Assemble omelette by adding the peas, bean sprouts, kimchi and MEET Beef Free Strips. Add some thinly sliced chilli and top with vegan mayo.
