PLANT BASED CHICKEN RISONI

INGREDIENTS:

  • 250g MEET Chicken Free Strips (available in the chilled meat section of Woolworths)

  • 1 red onion

  • 1 tbs extra virgin olive oil

  • 250g risoni (available in the dry section of Woolworths)

  • 1/4 cup basil pesto

  • 2 tomatoes, chopped

  • 1 Lebanese cucumber, halved lengthways, sliced diagonally

  • 50g plant based feta, crumbled

  • 1/4 bunch basil, leaves picked


METHOD:

  1. Finely chop half of the onion. Heat oil in a large, deep frying pan over medium-high heat. Add chopped onion and cook for 4 minutes, stirring, or until softened. Add risoni, then cook, stirring, for 1 minute.

  2. Add pesto and 2 1/3 cups water and bring to a boil. Reduce heat to medium-low and simmer, covered, for 10-12 minutes, stirring occasionally until risoni is tender.

  3.  While the risoni simmers, heat oil in a pan over medium-high heat and add MEET Chicken Free Strips. Cook until golden and heated through then remove from pan and put aside.

  4. Divide risoni mixture among serving bowls. Top with plant based chicken strips, sundried tomato, cucumber, plant based feta, basil and remaining onion.
