PLANT BASED BAO BUNS



INGREDIENTS:

- 250g MEET Tenders (Available in the Frozen section at Coles)

- 6-8 Bao Buns - 4 tbsp olive oil - 200g coleslaw kit - 1 Lebanese cucumbers

- Plant Based Mayonnaise - 1⁄2 tsp salt - 4 Tbs rice vinegar. - 1 tsp sugar


METHOD:

  1. In medium bowl mix sugar, 1⁄2 tsp salt, 2 Tbs rice vinegar. Thinly slice cucumber, add to bowl and combine. This will pickle the cucumber.

  2. Mix 2tbsp oil with the coleslaw and add the remaining rice vinegar, toss to coat.

  3. Remove boa buns from their packaging and place them in Bamboo basket. Place Basket over boiling water and steam for 8-10min.

  4. In a medium pan, over a medium heat add 2 tbsp olive oil and cook the MEET Tenders for 2-3 min or until golden & cooked through

  5. Speed a little mayonnaise onto each bun. Divide MEET Tenders between buns. Add 2 slices of cucumber, a spoon full of slaw. Serve with remaining slaw on the side.
