- 240g MEET Italian Meetballs (Available at Coles, in the chilled meat section) - 1/2 cups couscous - 1/4 cup fresh coriander - 1 1/2 tbsp Middle Eastern spice blend - 2 tsp finely grated lemon rind, plus lemon wedges to serve

- 3 tbsp live oil - 1 large zucchini - 1 red capsicum

- 2 flat breads (toasted) - 1 red onion - 250g cherry tomatoes - 1 galic clove - 1 small tub coconut yogurt


  1. Preheat oven to 180 degrees, fan forced. In a bowl at 1/2 cup couscous & 1/2 cup boiling water. Cover and set aside.

  2. Prepare vegetables - cut capsicum in cubes, halve the tomatoes, cut zucchini and roughly chop the coriander.

  3. In a large fry pan heat 2 tbsp olive oil over a medium heat, and add the MEET Italian Meetballs and spice blend (Any African spice will go if you don’t have middle eastern spice). Cook for 5-6 min.

  4. In separate pan, heat 1 tbsp olive oil and cook the tomatoes, capsicum, red onion, zucchini until softened. Add the lemon rind and half the coriander. Mix with the MEET Italian Meetballs and add garlic and cook for 1 more min or till fragrant.

  5. In a small/cooking tray place the couscous to layer the bottom of the tray, add the Meetball mixture on top of cous cous.

  6. Add tray to oven, bake for around 10min, then add flatbreads in oven and bake for a further 5 -10min or until the flatbreads look golden.

  7. Dish & Serve greek yogurt on Side with lemon wedges and add extra coriander on top.
