MEXICAN BOWL



INGREDIENTS:

  • MEET (Frozen) Strips

  • 2 tbsp salt-reduced taco seasoning

  • Olive oil spray

  • 80g baby spinach leaves

  • 200g baby tomatoes, halved

  • 2 large carrots, peeled, shredded

  • 1 avocado, quartered

  • 400g can Kidney beans (can use black beans), rinsed and drained

  • Coriander leaves


METHOD:


  1. Place MEET Strips and taco seasoning in a large bowl. Seal bag and rub to coat. Spray a large non-stick frying pan with olive oil and heat over medium-high heat.

  2. Cook MEET Strips, in batches, for 1-2 minutes each side or until browned and cooked through. Set aside on a plate.

  3. Divide spinach, tomatoes, corn, avocado and beans between 4 bowls.

  4. Top with coriander.

  5. *Add plant based cheese for and plant based sour cream, if wanted.

  6. Tip * add jalapenos for extra kick and lime for flavour
