
INGREDIENTS:
serves 3-4 as a starter
6-8 bamboo skewers
1 packet frozen MEET Meetballs (thawed)
1 red capsicum
1 yellow capsicum
1 green capsicum
½ red onion
1 zucchini
Olive oil
Sea salt
2 tbsp chopped parsley METHOD:
Soak the bamboo skewers in water- this will prevent them from burning on the barbecue
De-seed the capsicums and chop them into chunky 2x2cm squares
Cut the onions into quarters
Slice the zucchini into 1cm thick discs
Thread the vegetables and MEET Meetballs onto the bamboo skewers, alternating between vegetables and Meetballs to get a good mix on each skewer
Pre-heat your barbecue or grill. Brush each skewer with olive oil and sprinkle with sea salt, then grill for 1-2 minutes on each side, rotating regularly until the vegetables are lightly charred and the Meetballs are browned.
Set aside on a serving plate, and garnish with a handful of chopped parsley.
