
INGREDIENTS:
250g MEET Strips (Available in the Frozen section of coles)
2 tbsp Olive Oil
2 Sweet Potatoes
1 red onion, thinly sliced
2 fresh garlic cloves
1/4 tsp chilli powder
1 avocado - cubed
250g cherry tomatoes
1/2 lemon (juiced)
100g plant-based feta (crumbled)
Small bunch of spring onions
METHOD:
Preheat oven to 180 degrees fan forced. Slice sweet potato’s in to 1 cm thick chips and cook for around 25-30min (may vary with different ovens) While the sweet potato fries are baking, prep the other ingredients.
Cut the avocado into 1 cm thick cubes. Thinly slice the red onion. Halve the cherry tomatoes, and thinly slice the spring onions.
In large fry pan over a medium heat, add 2 tbs olive oil and cook MEET Strips for 2mins until lightly browned. Add the chilli powder, and garlic and cook for a further 1min - stirring occasionally.
To serve, place sweet potatoes in a medium bowl. Top with the avocado, red onion and tomato, then add the MEET Strips. Sprinkle with plant-based feta, spring onions and a squeeze lemon juice over the top.
