INGREDIENTS:
1/2 pkt dried vermicelli noodles
1/4 cup sweet chilli sauce
2 limes
350g Asian-style salad kit (available in the fruit and veg section of Coles)
1/4 bunch coriander, leaves picked
1 tbs vegetable oil
METHOD:
Place vermicelli noodles in a large heatproof bowl. Cover with boiling water and stand for 5 minutes or until tender. Drain and rinse under cold water. Put aside until needed.
In a large pan, heat oil over medium high heat and add MEET Meetballs, and cook until golden and cooked through.
Juice 1 lime and combine with sweet chilli sauce in a bowl. Add mixture to the frying pan tossing meatballs to coat in sauce mixture, for 2 minutes or until sticky.
Divide the noodles and Asian salad kit among bowls drizzling salad dressing evenly among serves, then top with sticky Meetballs, crispy noodles and coriander. Serve with lime wedges.
